The name thooyamalli refers to “Thooya” means pure and “Malli” means jasmine would be an ideal substitute for white rice.

It is one of the least known varieties of rice that hold immense health benefits.

It was indeed the favorite rice for many emperors in ancient times.

The ratio for thooyamalli rice is 2 cups of water and 1 cup of rice. You can double or triple the recipe but make sure the cooking utensil is enough to hold the rice when it is cooked.

Thooyamalli rice can be grinded after dried and can be used for making kozhukattai,Pongal, idli/dosa batter and other variety rice like tamarind rice, tomato rice, lemon rice, etc.
